502 - Carlo's Cucina's Pickerel Cheek Ceviche and Magnifico Burger
Pickerel Cheek Ceviche
- ¼ red onion
- 3 cloves garlic
- ¼ bunch cilantro
- 2 tbsp. corn
- 15-20 pickerel cheeks
- 1 tbsp. brown sugar
- ½ tsp pepper
- Juice from two whole limes
Parmesan aioli
- 2 roasted garlic bulbs
- 3 tbsp. mayo
- Pinch of salt
- ½ tbsp. lemon juice
- ½ cup Parmesan cheese
Magnifico Burger
Assembly
- 5 oz ground beef patty
- Aioli on bottom bun
- Parmesan cheese, ⅔ cup on patty
- Soppressata, 3 pieces on top of cheese
- Arugula (6-7 pieces) mixed with olive oil, salt and pepper on top of soppressata
- Top off with caponata
- Aioli on top bun
Directions:
1. Begin by cutting your vegetables (onions, tomatoes, etc.). Once cut, place them all into a bowl.
2. Add cilantro, corn, and pickerel cheeks into the bowl. Add a pinch of brown sugar, salt, and pepper. Squeeze lime juice on top.
3. Start by squeezing roasted garlic into a bowl, mash it all together. Pour mayo into the bowl. Add a pinch of salt.
4. Squeeze lemon juice into the bowl. Add grated parmesan cheese and mix it all together.
5. Roll 5 oz ground beef patty and smash with parchment paper. Oil your pan and place the beef on the pan. Cook for 8-9 minutes.
Plating:
1. Spread parmesan aioli on bottom bun, sprinkle Parmesan on top of patty and place 3 strips of soppressata on top.
2. Place arugula on top of soppressata, scoop caponata on top to finish it off.
3. Spread aioli on top bun to keep it all together.
