Hummus

Ingredients:
1 can chickpeas
2 tbsp tahini
1 garlic clove, crushed
1 tsp kosher salt
1/4 cup quality extra virgin olive oil (plus extra for drizzling)
2 tbsp lemon juice
Paprika, sumac or zaatar (optional)
Chopped coriander
Directions:
1. Drain and rinse the chickpeas in cold water and tip into the food processor. Add the tahini, crushed garlic, salt, lemon juice and seven tablespoons of the reserved liquid from the cans. Turn on the food processor and slowly pour in the oil while it runs.
2. Allow the food processor to run for a few minutes until the hummus is light and airy. Pour into a serving dish. Drizzle with some more extra virgin olive oil and decorate with a few whole chickpeas. Sprinkle with paprika and finely chopped coriander for colour.
